My family was addicted to Bob Evan's breakfast sausage but for some reason, all the stores stopped carrying it. Faced with a crisis, we made our own and after a few failures and many tweaks, this is a damn good copy.

2 lbs ground pork plus pork fat scraps if possible
1 1/2 tsp dried sage
3/4 tsp dried thyme
3 tsp light brown sugar
2 tsp kosher salt
1 1/2 tsp pepper
1/4 tsp crushed red pepper flakes
1/4 tsp cayenne pepper
1/2 tsp ground nutmeg
1/4 tsp dried marjoram
1/8 tsp ground cloves
Premix all the spices in one bowl.
Grind pork with fat scraps. We have tried this recipe with beef and turkey. The combination of turkey and pork works but beef didn't turn out well at all. Try your own meat combos but remember that a small amount of fat is needed to get this recipe right.
Mix spices into the meat. At this point you can form patties and freeze them for later use.
To cook: fry on both sides for 3 to 5 minutes depending on how you like your sausage cooked. This makes the best biscuits and gravy too!
